Clams in Tio Pepe

Due to its light and fresh character Tio Pepe is the perfect accompaniment to shellfish such as clams.

Ingredients:

300 gr. of clams

2 chopped cloves of garlic

Iberian ham cut into strips

3-4 sliced mushrooms

1 spoon of flour

Seaweed

½ glass of Tio Pepe

Bay leaf

¼ Kg. of peeled prawns

Olive oil

 

Preparation:

1º Add the garlic to a pan with olive oil and sauté, then add the mushrooms.

2º After 3-4 minutes (once the mushrooms are tender), add the flour, the bay leaf, the clams, the Iberian ham, and the Tio Pepe.

3º When clams begin to open, add the seaweed and prawns. Cook for 2-3 minutes until all the clams are opened.

4º It is ready to serve.
